Wow I need to get my butt in gear on blogging. I got back from vacation and work has been non stop crazy ever since. I still need to blog about my amazing Disney vacation. We also had a great middle eastern inspired meal this week that I also want to share. Luckily this weekend plans to be low key so I am expecting to get some major blogging done!

So we got home from vacation at Disney yesterday. It was a great trip and we had so much fun. It is nice to have a day back to get the house together before going back to work. JP and I spent the day grocery shopping and prepping food for the week. JP and I are doing a biggest loser type challenge for the next six months.  Each week we are going to go by percentage of weight loss. The winner for each month will get to go on a date of their choosing by the loser. Today we are making two of my favorite healthy meals.

Taco Junk

For dinner tonight is taco junk, which is ground turkey, black beans, corn, salsa, and dry ranch dressing mix. It is an awesome healthy meal.

I also made cheesy chicken burrito filling for lunches this week. This recipe is from the website, Aimee’s Adventures. This is a great site to find lots of healthy easy meals. I used it a lot when I was previously on weight watchers. I will post soon on my vacation. I have a ton of pictures to share!
