Today was a crazy day for me. Holiday weeks are extra busy at my job so it makes eating healthy even more of a challange. Tonight my husband is out so I made dinner on my own. I made leftover crab cakes from cost-co, cottage cheese, and sauted some spinich with red onions. We buy the big bag of spinach from cost-co as well which makes for easy salads and side dishes. If anyone has any additional ideas for spinach, please let me know.
